Beef Lemongrass Stir Fry: A Delicious Flavorful Asian Delight
Ingredients:
- 1 lb beef sirloin, thinly sliced
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 stalks lemongrass, finely chopped
- 2 tablespoons vegetable oil, divided
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 onion, thinly sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- Optional toppings: toasted sesame seeds, chopped peanuts, fresh cilantro or Thai basil
Instructions:
- In a bowl, combine the thinly sliced beef with soy sauce, minced garlic, grated ginger, and chopped lemongrass. Allow the beef to marinate for at least 30 minutes.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the marinated beef and stir-fry until cooked to your desired level of doneness. Remove the beef from the pan and set it aside.
- In the same pan, heat the remaining tablespoon of vegetable oil. Add the sliced bell peppers, onion, broccoli florets, and julienned carrot. Stir-fry until the vegetables are crisp-tender.
- Return the cooked beef to the pan with the vegetables. Toss everything together until well combined.
