- 1 cup diced andouille sausage (or any spicy sausage of your choice)
- 1/2 cup diced bell peppers (a mix of red, green, and yellow)
- 1/2 cup diced celery
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust to heat preference)
- 1/2 cup chicken broth
- 1/4 cup chopped green onions
- 1/4 cup chopped parsley
- 1/2 cup grated cheddar cheese
- 2 tablespoons olive oil
Instructions:
- Prepare the Cajun Stuffed Chicken Breast: a. Preheat your oven to 375°F (190°C). b. Lay each chicken breast flat on a cutting board and season both sides with Cajun seasoning, salt, and pepper. Set aside.
- Make the Stuffing: a. In a large skillet over medium heat, heat the olive oil. b. Add the diced onions, celery, and bell peppers. Sauté until they begin to soften, about 5-7 minutes. c. Add the minced garlic, dried thyme, dried oregano, paprika, and cayenne pepper to the skillet. Stir well and cook for another 2 minutes. d. Stir in the diced andouille sausage and cook for 5 minutes, allowing it to brown slightly. e. Pour in the chicken broth and bring the mixture to a simmer. f. Allow the mixture to simmer for about 5 minutes until the liquid is slightly reduced. g. Remove the skillet from heat and stir in the green onions, parsley, and grated cheddar cheese until everything is well combined and the cheese is melted.
- Assemble the Cajun Stuffed Chicken Breast: a. Lay the seasoned chicken breasts flat on a clean surface. b. Place a generous amount of the sausage and vegetable mixture onto one side of each chicken breast. c. Fold the other half of the chicken breast over the stuffing, creating a pocket. Use toothpicks to secure the edges and ensure the stuffing doesn’t spill out during cooking.
- Cook the Cajun Stuffed Chicken Breast: a. Place the stuffed chicken breasts in a baking dish. b. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and no longer pink in the center. c. Optionally, you can sprinkle some extra grated cheddar cheese on top of the stuffed chicken during the last 5 minutes of baking for an extra cheesy crust.
- Serve and Enjoy the Cajun Stuffed Chicken Breast: a. Once done, remove the toothpicks from the chicken. b. Serve the Cajun Stuffed Chicken Breast hot, garnished with additional chopped parsley or green onions if desired. c. This dish pairs well with a side of roasted vegetables or a fresh green salad.
